Below you will find her delicious Pumpkin Crunch Cake recipe and what she has to say about it....
1 cup milk
1 cup sugar
1 tsp. cinnamon (I put in more. I love cinnamon!)
1/4 tsp. ginger
1/2 tsp. salt
1 cup pumpkin ( I use 1 1/2 cups. I think it's better.)
1 yellow cake mix
1 1/2 sticks butter
1/2 cup chopped pecans (if you like nuts)
Mix all ingredients together, pour into 9x13 greased pan. Bake at 350 for 45-50 minutes. Dust with confectionery sugar and top with cool whip (optional)
Personally, I leave out the nuts and don't bother dusting it with sugar or cool whip. It's wonderful just by itself. Everyone who I have ever made it for loved it!
