Here is the recipe...
- 1-½ cup All Purpose Flour
- ½ cups Whole Wheat Flour
- ½ teaspoons Salt
- 3 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Pumpkin Pie Spice
- 2 Tablespoons Light Brown Sugar
- 5 Tablespoons Cold Unsalted Butter, Cubed
- 1 cup Pumpkin
- 1 Tablespoon Honey
- ¼ cups Greek Yogurt (0% Or 2%) - You Might Need Up To 1/2 Cup
1/2 cup powdered sugar, or more if you want lots of icing
2 tblsp maple syrup
2 tblsp melted butter
a splash of milk.. if you think it needs to be a bit thinner.
Preheat oven to 450 degrees.
Mix together the flours, salt, baking powder, baking soda, pumpkin pie spice and brown sugar. Place cubed butter into dry ingredients and blend with a pastry blender. Blend thoroughly.
Stir in the pumpkin puree and honey into the dry ingredients. Add enough yogurt so that a ball of dough forms. Dough will be slightly sticky—this is fine. Knead the ball of dough 8 to 10 times until everything is thoroughly mixed together.
Drop tablespoon-size biscuits onto a parchment-lined baking sheet. Bake the biscuits for about 10 to 12 minutes until tops are golden. Place on rack to cool and drizzle with maple glaze.
Here is a little funny story to go along with your biscuit/scones.. I took them to church and had 3 people comment on how yummy they were.. but here is the funny part, one of the girls had to introduce herself and confess that she at 5 of them! Anyway, I think they were a hit.
