This is really good, and healthy. I also like that it will travel, and reheat well. I have a monthly women's prayer breakfast that I go to for church and I am always looking for something new to share. Although they would all prefer that I bring my fried potatoes EVERY time.. sometimes I want to try something different.  I found the recipe on Lynn's Kitchen Adventures, she has a few different versions of this, including a coconut baked oatmeal that I really want to try.

Alright enough chattering here is the recipe...

Apple Cinnamon Baked Oatmeal


Ingredients:

          -Approximately 8 Servings-
  • 3 cups oats..old fashioned or quick cooking
  • ½ cup brown sugar
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 2 teaspoons baking powder
  • ¾ teaspoons salt
  • 1 teaspoon vanilla
  • ¾ cup applesauce
  • 1 teaspoon cinnamon
  • 2 apples, peeled and chopped
Mix all ingredients together and bake at 350 degrees in a greased 9x13 for 25-30 minutes- I baked mine for about 30-35.. but I think my oven is messed up, so just check it and take it out when you think ya should. Also I like mine more cake like and baking it longer will give you that result.

These are really yummy, they remind me of a cross between a pancake and a popover. I found the recipe on my new favorite website.. MakeandTakes.com They puff all up and then sink down into cup shapes as they cool. We filled them with strawberries and drizzled them with maple syrup. My Mom really liked them with peanut butter too. Whatever you put on your pancakes will be fantastic on these little guys. I will say that my favorite was just a little butter and maple syrup.. but that's just me.
    On to the recipe...

Pop-Up Pancakes
  • 1 cup milk
  • 1 cup flour
  • 6 eggs
  • 1/4 cup melted butter
  • dash salt
Put all ingredients in the blender and blend until smooth, pour into well greased muffin tins. You also can use a 9x13 and make one big pancake.. but I like the little ones. Bake at 400 degrees for 15 minutes until puffy and light golden brown.

Fills a 9x13 pan or 24 muffins
