Honestly I don't ever remember being this anxious for Summer to be over.
Here is what I made...
I am calling this Pumpkin Crumble even though the original recipe says bars... well they aren't bars when ya substitute pumpkin for the jam it calls for...so it's a crumble.
- 1 cup butter, softened
- 1 cup , plus 1 tbls. packed brown sugar
- 1 3/4 cups all-purpose flour
- 2 cups rolled oats
- 3/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup canned pumpkin
- 2 tbls. granulated sugar
- 1/2 tsp pumpkin pie spice
Cream butter and 3/4 cups brown sugar together then mix in flour, oats, baking soda, and cinnamon.
Spray a 9x13 baking dish with cooking spray, press half of the crumble into the bottom of the dish.
In a separate bowl combine pumpkin, granulated sugar and pumpkin pie spice.
Spread pumpkin mixture over crumble in bottom of dish, sprinkle 1 tbls. brown sugar over pumpkin then press the remainder of the crumble mixture on top of the pumpkin.
Bake at 400 degrees for 25-30 minutes until golden brown.
Enjoy it warm, it would be really good with some vanilla ice cream.
