- 1 lb. Zucchini or squash (about 2 medium-sized)
- 1/4 cup Shredded cheddar or parmesan (heaping)
- 1/4 cup Italian Style Panko breadcrumbs (heaping)
- 1-2 tablespoon Olive oil
- Cooking Spray
So Heather and I have been swapping recipes via e-mail lately and these Zucchini Crisps are by far our favorite. Well, okay our favorite besides the chocolate zucchini bread... more about that later. Seriously though you need to make these.. the only thing that I found wrong with them is that I didn't make nearly enough of them. :)
Here is what you will need...
Panko Bread Crumbs with Italian Seasoning, Olive Oil, Cheddar Cheese, and Zucchini.
Lightly spray a cookie sheet with cooking spray and place on cookie sheet. Bake for 22-27 minutes at 400 degrees until they are golden brown and look like this..
.now try not to eat all of them standing at the kitchen counter before you actually serve them for dinner.
