Some people call this salad Fumi Salad, some call it Chinese Chicken Salad (although this version has no chicken) some call it Cabbage Salad.. and if you go to church with me it is called Linda's Salad. My Mom always makes it and if she doesn't much rioting and chaos breaks out.. okay not really.. but people love it. In fact we were discussing it at the Thanksgiving Feast yesterday and decided it would be really good with some mandarin oranges thrown in.  Either way it's delicious and makes a lot so it is great for pot lucks or parties.

Fumi Salad
SALAD:
1 head of cabbage
8 green onions
1/2 c. slivered almonds (toasted)
1/2 c. toasted sesame seed
2 pkgs. Top Ramon (noodles only)

DRESSING:
1/2 c. of oil
6 tbsp. rice vinegar
2 tbsp. Accent
2 tsp. salt
4 tbsp. sugar
1 tsp. pepper

Chop cabbage. Mix in large bowl with sesame seeds, almonds, crushed noodles. Add dressing. It is better if you let it sit in the fridge for awhile and then add the crushed Ramen noodles that way they don't get all soggy.
 
 
So the other day it was actually raining.. I know, I know I live in Southern California, home of Mickey Mouse, where the sun is always shinning, right?? Nope, not one day last week.

Anyway, I was cold and decided that we should have soup..

Chicken Noodle Soup
Ingredients:
5 Cups Chicken stock
half an onion
1/2 lb.chopped,  cooked chicken breast- (I sauteed it with salt and garlic pepper.)
handful of frozen carrots
handful of frozen green beans
handful or two of your favorite pasta
Salt, Pepper to taste
Thyme.. about half a tsp. To be honest, I didn't measure it. :)

Directions:
Cook chicken and season according to taste, put all the ingredients in a pot with the chicken broth. Cook until veggies, and pasta are cooked, and it is heated all the way through. Season to taste.

I serve it with 10 Minute Rolls from Southern Plate. By the way if you haven't ever checked out Southern Plate you are totally missing out! Go now I tell you, Christy Jordan is awesome and so are her recipes.
