I followed this Banana Bread recipe except that I used the pumpkin pie filling in place of the bananas.. now next time I would cut the sugar down to maybe 1 cup instead of 1 and a half.. it was good but it was sweeter then I would have liked. I also think that it would be really good with pecans... if only I wasn't allergic to them... I think someone needs to make it with pecans and let me know if it is as good as I am imagining it will be. Next time I will add some dried cranberries.
Since the title promises you a holiday baking short cut, here it is...
Mix up a double batch of this recipe but divide it at the end and put banana in half and pumpkin in the other half. Then you will end up with two loaves of each. I know the recipe says to start out with the banana/pumpkin, but it wouldn't hurt anything to put it in last. This would make great gifts, a few years ago the dollar tree had little mini loaf pans that would be perfect for this... just make sure to adjust the baking time if you use the mini pans.
