Happy Tuesday everyone, I hope you are having a great week so far. I recently posted a Missionary Monday blog about Frank and Suzie Gonzalez and since then I have been emailing with Suzie. It is such a blessing to feel so connected with a person even though we have never met, and virtually know nothing about one another, and yet there is still a connection because of our mutual love for Jesus, and the desire to encourage other women. It makes me think of a quote from Beth Moore:
“ We’re meant to be like multi-colored Christmas lights attached to one electrical cord called the Holy Spirit and strung strategically all over the earth. Yep millions of lights on one cord with the guts to shine more brightly because we know the others are there.”

"El Torito" Sweet Corn Cake
I have always loved the little scoop of corn cake that you get with your meal at El Torito. So I searched and found one that tastes pretty close. It is a great alternative to potatoes or rice even. We had it the other night with BBQ chicken and it was a great combination.
1 can creamed corn
1 stick butter, melted
1 box Jiffy cornbread mix
(or you can do it this way if you don't want to use something from a box)
Preheat oven to 350. Mix all ingredients together, pour into 8x8 dish and baked for 35-45 minutes until lightly brown on top. Let stand for 5 minutes before serving.
So simple and so yummy, I think it would awesome to add some cheese or green chilies to it as well. Enjoy!
